Trader Joe's Seasoning in a Pickle: 4 Easy & Delicious Recipes
TJ’s Seasoning in a Pickle is a limited-edition seasoning. It’s usually available only during the summer, so be sure to pick it up when you can!
Drawing inspiration from the flavors of a classic dill pickle, it’s tangy, salty, and, of course, delightfully dilly!

RECIPE #1 –
Dill Pickle Egg White & Avocado Toast
Makes one serving.

Ingredients:

1 slice whole grain bread
-
oil spray
-
½ cup egg whites
-
¼ avocado, mashed
-
¼ teaspoon Seasoning in a Pickle Seasoning Blend
Directions:
-
Toast the bread.
-
Spray a pan with oil and cook the egg whites on medium-low for 2-3 minutes.

Cover with lid to help egg whites cook evenly.
-
Spread the mashed avocado onto the toast, sprinkle some of the seasoning, and top with the cooked egg whites.

Add remaining seasoning. Enjoy!
RECIPE #2 –
Dill Pickle Dip with Veggies & Chips
Makes one serving.

Ingredients:

2 tablespoons nonfat plain Greek yogurt
-
¼ teaspoon Seasoning in a Pickle Seasoning Blend
-
2 Persian cucumbers, sliced
-
8 Pita chips - baked pita bread sprinkled with sea salt
Directions:

Combine the yogurt and seasoning and mix well.
-
When ready to eat, simply enjoy the cucumber slices & chips with the dip.
RECIPE #3 –
Dill Pickle Popcorn
Makes two servings.

Ingredients:

¼ cup Trader Joe’s Popping Corn (kernels)
-
1 tablespoon grape seed oil or avocado oil
-
½ teaspoon Seasoning in a Pickle Seasoning Blend, divided
Directions:

Combine the kernels and ¼ teaspoon seasoning in a small container and mix well.

Pour oil into a pan. Add 2-3 kernels, cover, and heat.

When the kernels pop, add the rest of the popcorn-seasoning blend. Cover and shake pan over medium heat until popping stops.

Add remaining seasoning and pour into two bowls. Enjoy!
RECIPE #4 –
Dill Pickle White Fish with Veggies & Rice Medley
Makes two servings.

Ingredients:

½ pouch Rice Medley (frozen section)
-
~ ½ package Wild Caught Cod Fillets (Boneless, Skinless Fillets) The package will be about 1 pound. Store half package in freezer for future use.

1 pack (12 oz.) cauliflower florets
-
6 oz. (~ ½ pack) Organic Carrots of Many Colors
-
1 teaspoon Seasoning in a Pickle Seasoning Blend, divided
-
1 tablespoon olive oil
-
1 lemon, divided
-
2 tablespoons plain nonfat Greek yogurt
Directions:
-
Place fish in fridge the night before to defrost.

Make the rice medley according to package instructions.
-
Preheat oven or toaster oven to 375°F and position the rack in the middle of the oven.

Place a large piece of foil on a baking sheet. (The foil should be large enough to fold over the fish & veggies and seal.)

Place the fish & veggies on the sheet. Top with ¾ teaspoon seasoning, 1 tablespoon olive oil, and the juice of ½ lemon. Fold the foil over and seal.

Bake for 15-20 minutes. Depending on the thickness of the fish, you may need to cook an additional five minutes.

Meanwhile, mix the yogurt with the remaining ¼ teaspoon seasoning and set aside.

When fish is done, open the foil carefully to avoid escaping steam.

Place half of the rice, fish, veggies, and yogurt dip on each plate. Squeeze ¼ lemon over each serving of fish. Enjoy!
