Simple Carrot Ginger Miso Salad with Trader Joe's Salmon Burger

 

This simple & delicious salad will surprise your tastebuds with fun flavors & textures. The snow peas & baby corn add a nice crunch, the fire roasted bell peppers & avocados are rich & creamy, and Trader Joe’s Carrot Ginger Miso Dressing adds a savory, zesty flavor with a punch of ginger.

 

 

Makes 2 servings
All ingredients purchased @ Trader Joe's

 

Ingredients:

  • 2 salmon burgers

  • 1 pack Herb Salad Mix

  • ½ pack sugar snap peas, chopped

  • ½ pack baby corn, chopped

  • ½ jar fire roasted red peppers, diced

  • 1 avocado, diced

  • ½ cup Carrot Ginger Miso Salad Dressing

 

Directions:

  1. Cook the salmon burgers according to package instructions. Once done, cut into small pieces.

  2. Pour the Herb Salad Mix into a large salad bowl.

  3. Add the snow peas, baby corn, red peppers, avocado, and salmon pieces.
    Add the dressing and toss the salad.

  4. Divide onto two plates. Enjoy!
