Savory Oatmeal
We love oatmeal topped with fruit & nuts, so we were skeptical when we began experimenting with savory oatmeal. But since we’ve perfected this recipe, it’s become one of our all-time favorite breakfasts!
So if the idea of mushrooms & eggs with oatmeal sounds strange to you, we get it! But give it a try to see how hearty, comforting & delicious it is.
Makes 2 servings
All ingredients purchased @ Trader Joe's
Ingredients:
- 1 cup Organic Rolled Oats With Ancient Grains & Seeds
- 2 cups Unsweetened Almond Beverage (original or vanilla)
- ½ package Sliced Mushrooms (white or crimini)
- 2 Eggs
- ½ teaspoon Everything but the Bagel Sesame Seasoning Blend
- 8 oz (½ container) Cherries
Directions:

Combine oats & almond beverage in a pan. Cook on medium 5-10 minutes. When ready, divide into two bowls.

While oatmeal cooks, spray another pan with oil & sauté the mushrooms. When they begin to brown, push them to one side.

Gently crack the eggs into the same pan, cover with lid, and cook 2-3 minutes (until yolk has reached desired firmness).

Top each serving of oatmeal with half the mushrooms, 1 egg, and ¼ teaspoon seasoning. Enjoy the cherries on the side.
*Cooking for one? Make the oatmeal for two servings & store half in the fridge for tomorrow. Each morning, cook 1 egg + ¼ package mushrooms. To reheat oatmeal, add 2 tablespoons water or almond beverage and heat on stovetop or in microwave.
