Sunrise Frittata Muffin

 

This savory & satisfying breakfast sandwich is our healthy version of an Egg McMuffin!

For the filling, we’re using Trader Joe’s Egg Frittata, made with egg, Swiss cheese, cauliflower, and onions. Each frittata is shaped like a little disc that fits perfectly on an English Muffin.

And for extra fiber & nutrients, we’re adding tomato & avocado. These Sunrise Frittata Muffins are not only delicious but also quick to assemble, making them perfect for busy mornings. Give this recipe a try and start your day with a nutritious and tasty boost!

 

 

Makes 2 servings
All ingredients purchased @ Trader Joe's

 

Ingredients:

  • 1 package Egg Frittata (frozen)
  • 2 Whole Wheat English Muffins
  • ½ Avocado
  • 1 Tomato (sliced)

 

Directions:

  1. Cut the English muffins in half and then toast.

  2. Heat the two frittatas according to package instructions.

  3. On bottom half of each muffin: layer ¼ avocado, slices of ½ tomato, and one frittata.

  4. Cover with top half of muffin and enjoy your breakfast sandwiches.
