Stacked Pizzadilla
Stacked quesadillas are usually made by stacking 4 (or more!) tortillas on top of each other, with a variety of ingredients between each layer.
They’re delicious, but it’s way too much food if you’re cooking for just yourself. So our solution is to fold one tortilla into a stack!
Oh, and we’re adding another twist too! Instead of traditional quesadilla ingredients, we’re satisfying our pizza craving by turning this into a Pizzadilla!
Makes 1 serving
All ingredients purchased @ Trader Joe's
Ingredients:

1 whole wheat tortilla

2 tablespoons Trader Joe’s Pizza Sauce (refrigerated section)

2 slices Organic Oven Roasted Turkey Breast (1 slice cut into quarters for the pizzadilla; the other slice diced for the salad)

2 tablespoons Shredded Pizza Seasoned Toscano Cheese

¼ bag wild arugula
-
¼ jar fire roasted red peppers (use half as thick slices for the pizzadilla; dice the other half for the salad)

1 tomato (use 2-3 slices for the pizzadilla; dice the rest for the salad)

oil spray
-
1 tablespoon Glaze
Directions:

Fold the tortilla in half and then in half again. Unfold & lay flat so you can see the lines dividing it into quarters.

Cut along one seam from the center out to the edge of the tortilla.

Spread the pizza sauce evenly over the entire tortilla.

Starting in the bottom right and moving counter-clockwise, fill each quadrant with some of each ingredient in this order:
- turkey
- tomato slices
- handful of arugula
- fire roasted red pepper slices

Sprinkle the cheese over the tomato & red peppers.

Starting with the bottom right quadrant, fold the tortilla up to the top right, then the top left, then the bottom left.

Spray a skillet with oil and pre-heat for 30 seconds on medium.

Carefully place the pizzadilla in the skillet and cook for three minutes per side.

While pizzadilla cooks, make a side salad by combining the remaining arugula, tomatoes, red peppers and diced turkey. Drizzle Glaze on top and then mix well.
