Pumpkin Ravioli with Autumnal Harvest Sauce
Trader Joe’s Autumnal Harvest Creamy Pasta Sauce is a delicious tomato-based sauce with pumpkin, butternut squash and carrots.
Not only is it packed with flavor, it’s also packed with nutrients, including vitamin A, Vitamin C, iron & calcium. We love it in this quick & easy fall recipe.

Ingredients:

1 container Honey Roasted Pumpkin Ravioli*
- *If Roasted Pumpkin Ravioli is out of stock, replace it with Butternut Squash Ravioli.

oil spray

1 bag sliced white mushrooms

1 bag baby spinach
-
¼ pack (3 oz) grilled chicken breast, chopped

1 cup Autumnal Harvest Creamy Pasta Sauce*
- *If Autumnal Harvest Sauce is out of stock, replace it with Tomato Basil Marinara Sauce

2 tablespoons Parmesan cheese
Directions:

Make ravioli: Bring 8 cups water to a boil. Add ravioli & cook 3-5 minutes or until pasta begins to float. Drain & set aside.

Spray a pan with oil and cook the mushrooms & spinach over medium heat for three minutes, covered. Remove lid and sauté three more minutes.

Add the chicken, sauce and ravioli. Heat two more minutes.

Divide onto two plates and top each with one tablespoon Parmesan cheese. Enjoy!
- If cooking for one: We like the “cook once, eat twice” method! Place half on a plate for today and the other half in an airtight container and store in the fridge for tomorrow.
