Grecian Eggplant Chicken Bowl
Trader Joe’s Grecian Style Eggplant with Tomatoes & Onions is easy to overlook, but don’t let its humble appearance fool you. This little can packs a punch with bold flavors like curry powder, red pepper, parsley, and garlic.
We’ve turned it into a hearty Middle Eastern bowl with protein and whole grains, but its versatility doesn’t stop there. Try it tossed with pasta, spread on pizza, or mixed into a vibrant salad.

All ingredients purchased @ Trader Joe's
Ingredients:
- ½ pouch Rice Medley (frozen)
- 1 package Cauliflower Florets
- 6 oz. Grilled Chicken Breast (chopped)
- 1 can Grecian Style Eggplant with Tomatoes & Onions (canned)
- optional: handful of fresh cilantro
Directions:

Heat the rice according to package instructions.

Slice the cauliflower florets into smaller pieces for faster cooking.

Spray a pan with oil, preheat on medium, and sauté the cauliflower 3-5 minutes, until slightly browned.

Stir in the chicken & eggplant and continue cooking until all ingredients are heated through, about 5 more minutes.

When ready, place half the rice & half the eggplant-chicken mix onto each plate. If desired, garnish with a handful of cilantro. Enjoy!
