Grecian Eggplant Chicken Bowl
The canned Grecian Style Eggplant with Tomatoes & Onions is a product that’s often overlooked at Trader Joe’s. But you’ll be pleasantly surprised by the burst of flavors: curry powder, red pepper, parsley, and garlic.
We’ve combined it here with protein & whole grains for a complete middle eastern bowl, but we’ve also used it in pastas, pizzas, and salads.
Because the ingredients in this recipe are all frozen or canned, it’s a great “back up” meal for those busy weeks when you haven’t made it to the grocery store yet.

Ingredients:

½ pouch Rice Medley (frozen)

½ bag Organic Rainbow Cauliflower (frozen)

1 cup Just Grilled Chicken Strips (frozen)

1 can Grecian Style Eggplant with Tomatoes & Onions (canned)
Directions:

Heat the brown rice according to package instructions.

Pour the cauliflower into a colander and give it a quick rinse. Then thinly slice each floret.

Spray a pan with oil and sauté the cauliflower until slightly browned on both sides.

Cut any big pieces of chicken in half. Then add the chicken & eggplant to the pan and stir well.

Continue to heat about five minutes, until all ingredients are heated through.

When ready, place half the brown rice onto each plate and pour the eggplant chicken mixture on top. Enjoy!
