All ingredients purchased @ Trader Joe's

 

Ingredients:

  • 1 Whole Wheat Tortilla
  • ¼ cup Organic Black Beans
  • ¼ Avocado, sliced
  • 2 tablespoons Pico De Gallo Salsa (Mild or Spicy)
  • handful Shredded Iceberg Lettuce
  • 1 Persian Mini Cucumber, sliced
  • 2 tablespoons Light Shredded 3 Cheese Blend

 

Directions:

  1. Optional: Heat up the tortilla for a few seconds in a microwave, toaster oven, or stovetop.

  2. Place some of the beans in the center of the tortilla.

  3. Layer some of each ingredient on top, being careful not to overfill it.

  4. Fold the tortilla into a burrito or wrap. Mix the rest of the ingredients together to enjoy as a side salad.

  


*Packing your lunch to go? Avoid a soggy burrito by packing the tortilla in a zip-top bag and the rest of the ingredients in a small container. Assemble when ready to eat.
