Baked Zhoug Salmon with Broccoli Mashed Potatoes

We’re using Trader Joe’s Zhoug Sauce, a zesty, cilantro-packed sauce with a vibrant green color. It adds a bold kick of flavor that pairs perfectly with tender, flaky salmon. (And our handy foil packet method makes cooking & cleanup a total breeze!)
For a well-balanced dinner, we’re adding baby broccoli for a healthy crunch and mashed potatoes for a creamy, comforting texture.

Ingredients:
- ½ pack (8 oz.) salmon (two 4-oz. portions)
- 2 tablespoons Zhoug Sauce (Not a fan of spicy food? Use Vegan Kale, Cashew & Basil Pesto instead.)
- oil spray
- ⅓ bag Mashed Potatoes (frozen section)
- 1 pack baby broccoli (chopped)
Directions:
- Preheat oven to 350°.
- Place a large piece of foil on a baking sheet. (The foil should be large enough to fold over the salmon and seal.)
- Put the salmon on the sheet and spread the Zhoug Sauce over both pieces. Fold the foil over and seal. Place in the oven and bake 10-15 minutes.
- While fish bakes, spray a pan with oil, preheat on medium, and sauté the baby broccoli 8-10 minutes. Stir in the mashed potatoes and cook another 4-5 minutes.
- When done, divide the broccoli-mashed potatoes onto two plates and add a piece of salmon on top of each. Enjoy!
