Baked Zhoug Salmon with Broccoli Mashed Potatoes

 

Love a little heat in your meals? You’re in for a treat with this spicy recipe!

We’re using Trader Joe’s Zhoug Sauce, a zesty, cilantro-packed sauce with a vibrant green color. It adds a bold kick of flavor that pairs perfectly with tender, flaky salmon. (And our handy foil packet method makes cooking & cleanup a total breeze!)

For a well-balanced dinner, we’re adding baby broccoli for a healthy crunch and mashed potatoes for a creamy, comforting texture.

Ingredients:

  • ½ pack (8 oz.) salmon (two 4-oz. portions)
  • 2 tablespoons Zhoug Sauce (Not a fan of spicy food? Use Vegan Kale, Cashew & Basil Pesto instead.)
  • oil spray
  • ⅓ bag Mashed Potatoes (frozen section)
  • 1 pack baby broccoli (chopped)

 

Directions:

  1. Preheat oven to 350°.
  2. Place a large piece of foil on a baking sheet. (The foil should be large enough to fold over the salmon and seal.)
  3. Put the salmon on the sheet and spread the Zhoug Sauce over both pieces. Fold the foil over and seal. Place in the oven and bake 10-15 minutes.
  4. While fish bakes, spray a pan with oil, preheat on medium, and sauté the baby broccoli 8-10 minutes. Stir in the mashed potatoes and cook another 4-5 minutes.
  5. When done, divide the broccoli-mashed potatoes onto two plates and add a piece of salmon on top of each. Enjoy!
