Sweet Potato Toast: Four Ways

 

Sweet potato toast is a delicious & nutritious way to add some fall flavor to your meals. It works great as a breakfast toast or a lunchtime open-faced sandwich.

Here are our four favorite topping combinations. The first two bring out the sweet potato’s natural sweetness, and the other two emphasize its savory side.

One sweet potato will give you at least four slices of toast, so you can try them all! 

 

Basic Sweet Potato Toast


 

Ingredients:

  • 1 large sweet potato (makes 4 slices)

 

Directions:

  1. Wash & scrub potato with a vegetable brush.

  2. Slice off one end first. Then, with the flat side down, prop up the sweet potato and hold firmly.
  3. Using a large, sharp knife, carefully cut lengthwise into 1/4 inch thick slices.
  4. Place slices in toaster oven and toast until fork-tender but not soft. (10-15 minutes) 
    • No toaster oven? You can use a regular toaster, but you’ll probably have to push the lever down several times. OR, bake in an oven at 350° for 15-20 minutes.
  5. Remove sweet potato slices and allow to cool slightly before adding toppings.

Strawberry Yogurt


 

Ingredients:

  • ¼ cup nonfat plain Greek yogurt

  • ½ teaspoon vanilla extract

  • 6 strawberries, sliced

 

Directions:

  1. Mix the vanilla into the Greek yogurt.

  2. Spread the vanilla yogurt onto the sweet potato toast.

  3. Layer the strawberry slices on top.

 

 

Blueberry Nut Butter


 

Ingredients:

  • 1 tablespoon unsalted nut butter
  • ground cinnamon (optional)
  • 6 oz. blueberries

 

Directions:

  1. Spread the nut butter on the sweet potato toast.
  2. Sprinkle cinnamon if desired.
  3. Add the blueberries on top.

 

 

Chicken Salad


 

Ingredients:

  • ⅓ package Trader Joe’s Chicken Salad with White Chicken, Celery, Carrots & Green Onions

 

Directions:

  1. Spread the chicken salad on the sweet potato toast.

 

 

Avocado Egg & Mushroom


 

Ingredients:

  • oil spray

  • ¼ bag Sliced Crimini Mushrooms

  • 1 egg

  • ¼ avocado, mashed

 

Directions:

  1. Spray pan with oil & sauté sliced mushrooms on medium heat for five minutes. Set aside.
  2. Fry the egg in the same pan for 2-3 minutes.

  3. Spread the avocado on the sweet potato toast.

  4. Layer the mushrooms and egg on top.
