Roasted Corn & Chicken Pizzadilla
Pizzadilla! This recipe is the perfect healthy alternative to both pizzas & quesadillas.
It features Trader Joe’s fresh pizza sauce, which is flavorful, creamy and loaded with chunks of tomato.
By folding the pizza toppings into the tortilla, you get crispy crusts on top and bottom. Yum!
This recipe makes a super fun, easy & delicious Friday or Saturday night dinner!
Makes 2 servings
All ingredients purchased @ Trader Joe's
Ingredients:

2 whole wheat tortillas

2 tablespoons Trader Joe’s fresh Pizza Sauce*

1 cup Lite Shredded 3-Cheese Blend

½ bag (3 oz.) Baby Spinach

⅔ cup Roasted Corn (frozen)

½ pack (6 oz.) Grilled Lemon Pepper Chicken, diced
- Vegetarian Sub: 1 cup black beans

oil spray
*Note: Freeze the remainder of the sauce in an ice cube tray to make convenient single servings for future use.
Directions:

Spread one tablespoon pizza sauce on each tortilla.

Layer the cheese, spinach, corn & chicken evenly over half of each tortilla. Fold each tortilla over to create a half moon shape.

Spray a pan with oil and heat on medium.

One at a time, transfer each tortilla to the pan and cook about 30 seconds per side, or until the cheese melts and the outside is lightly browned.

Place one Pizzadilla on a plate for today. Let the other Pizzadilla cool and then place in an airtight container and store in the fridge for tomorrow.

On the second day, heat the Pizzadilla in an oven or toaster oven. Enjoy!
