Mini Cauliflower Pesto Pizzas
Craving pizza but want to keep it healthy? We’ve got the solution!
Our delicious Mini Cauliflower Pesto Pizzas are packed with veggies & protein and take just 15 minutes to make.
Trader Joe’s Cauliflower Slims have a savory cheesy flavor and make perfect little crusts as long as you toast them well. They’re made with cauliflower, eggs, Parmesan, skim milk, cheese cultures and yeast.
For the sauce, we’re using TJ’s Vegan Kale Cashew & Basil Pesto. This fresh & flavorful pesto is one of the best ones we’ve tried. The kale gives it depth, the basil adds freshness & the cashew butter makes it incredibly creamy.
And we’re topping it all off with Shredded Pizza Seasoned Toscano Cheese. This cheese is infused with dried herbs & spices for a little extra pizza pizzazz!

Ingredients:

2 Cauliflower Slims

oil spray
-
½ bag sliced white mushrooms
-
½ pack Fire Roasted Bell Peppers & Onions

2 slices Organic Uncured Black Forest Ham, diced

2 tablespoons Vegan Kale Cashew & Basil Pesto

2 tablespoons Shredded Pizza Seasoned Toscano Cheese
Directions:

Toast two Cauliflower Slims until they reach your desired crispness. (Works best in a toaster oven if available. Depending on your toaster, you may need to toast for up to 10 minutes.)

Meanwhile, lightly spray a pan with oil. Sauté mushrooms and Fire Roasted Bell Peppers & Onions 4-6 minutes on medium heat.

Add the diced ham and pesto. Cook four more minutes and then remove from heat.

Place the toasted Cauliflower Slims on a baking sheet. Top each Thin with 2 tablespoons veggie-ham mixture & 1 tablespoon cheese.

Broil 2-3 minutes until cheese melts.

Enjoy your mini pizzas with the remainder of the veggie-ham mixture on the side.
