Mediterranean Turkey Pita Pocket

Ingredients:

1 pack Organic Mediterranean Style Salad Kit

6 oz. (12 slices) Trader Joe’s Oven Roasted Turkey Breast, chopped

1 whole wheat pita pocket
Directions:

Pour the salad kit ingredients, including the dressing, into a bowl. (This salad tastes better after marinating in the dressing overnight!)

Add the chopped turkey and stir well.

Cut the pita pocket in half, stuff each half with salad, and place on two separate plates.

Divide the remaining salad onto each plate.

Optional: For extra flavor add one tablespoon sun-dried tomatoes to each serving.
- If cooking for one: We like the “cook once, eat twice” method! Store half the salad in an airtight container in the fridge along with ½ pita pocket. Enjoy one serving today and the second serving will be waiting for you in the fridge for tomorrow. No extra prep work needed!
