Mediterranean Turkey Pita Pocket

All ingredients purchased @ Trader Joe's
Ingredients:

1 package (6 oz.) Organic Trader Joe’s Oven Roasted Turkey Breast, chopped

1 package Organic Mediterranean Style Salad Kit

1 whole wheat pita pocket
Directions:

Combine the turkey & salad kit ingredients (including toppings & dressing) in a bowl. Toss well.

Cut the pita pocket in half, stuff each half with salad, and place on two separate plates.

Divide the remaining salad onto each plate.

Optional: For extra flavor add one tablespoon sun-dried tomatoes to each serving.
- If cooking for one: We like the “cook once, eat twice” method! Store half the salad in an airtight container in the fridge along with ½ pita pocket. Enjoy one serving today and the second serving will be waiting for you in the fridge for tomorrow. No extra prep work needed!
