Gochujang Shrimp Stir Fry
This recipe is the perfect quick and easy weeknight or weekend dinner!
The Gochujang Vegetable Stir Fry pack is found in the freezer section and is packed with vegetables: broccoli, carrots, edamame, bell peppers and zucchini spirals. The red chili paste sauce is already mixed into the frozen vegetables. This dish is sweet & savory with just a touch of spice.
To make this a well-balanced meal, we added a 1-2 nutritional punch: shrimp for protein and mushrooms for extra vitamins, minerals & antioxidants.
Feel free to experiment with different protein sources each time you make this meal. It also works well with chicken and tofu.

Ingredients:

½ pack (8 oz.) Argentinian Red Shrimp (* Defrost the shrimp in the fridge overnight.)

optional: black pepper and/or red chili pepper, to taste

1 pack sliced crimini mushrooms

1 bag Gochujang Vegetable Stir Fry
Directions:

Spray a pan with oil and heat on medium-high.

Add shrimp to hot pan.

Optional: Sprinkle black pepper, red chili pepper, or any other seasoning of your choice. (Watch the sodium content.)

Sauté the shrimp for one minute on each side. Set aside.

Drain the oil from the pan, spray oil again and cook the mushrooms with lid on for two minutes.

Add the Gochujang Vegetable Stir Fry. Cover the pan & continue to heat five minutes, stirring occasionally.

Remove lid, add the shrimp and cook 3-5 more minutes, until sauce has condensed.

Divide the meal into two servings.
- If cooking for one: We like the “cook once, eat twice” method! Place half on a plate for today and the other half in an airtight container and store in the fridge for tomorrow.
