Date & Egg White Scramble in Pita Pocket
Turn your breakfast into a perfect sweet treat! This combination of egg whites & dates is surprisingly delightful.
Plus, the egg whites make this meal high in protein while the dates make it high in fiber, vitamins & minerals. We’ve also added avocado as a good source of fat.

Ingredients:

½ piece whole wheat pita bread pocket

handful of spinach
-
2 dates, pitted
-
½ cup egg whites
-
¼ avocado
Directions:

Heat up the pita pocket in a microwave, toaster oven or stovetop. This will make it easier to open the pocket.

Spray a small skillet with oil, and then sauté the spinach and dates on medium heat for 1-2 minutes.

Add the egg whites and cook another 2-3 minutes.

Use spatula to stir frequently until egg whites are cooked through. Remove from heat.

Spread the avocado inside the pita pocket. Stuff some of the egg white scramble into the pocket and enjoy the rest on the side.
