Creamy Salsa with Veggies & Chips
Enjoying an afternoon snack is a great way to add extra nutrition to your day while staving off hunger between lunch & dinner.
Here’s a simple & yummy snack that provides protein, vitamins, minerals & fiber.
By combining Greek yogurt & salsa, we’ve created a surprisingly delicious, creamy & healthy dip.
Makes 2 servings
All ingredients purchased @ Trader Joe's
Ingredients:

¼ cup nonfat plain Greek yogurt

¼ cup Pepita Salsa (or any salsa of your choice)

1 container jicama sticks

6 baby bell peppers
-
20 Blue Corn Tortilla Chips
Directions:

Mix the salsa into the yogurt & stir well.

Divide the veggies & chips onto two plates.

Add half the creamy salsa to each plate. Enjoy!
- If prepping for one: We like the “prep once, eat twice” method! Place half of each ingredient in an airtight container. Store the veggies & dip in the fridge. Tomorrow’s snack is now ready to go!
