Asparagus Chicken Risotto

 

This dish feels like a rich, creamy, indulgent comfort food, but don’t worry, it’s actually good for you!

Risotto has a reputation for being difficult to master, but like all our recipes, we’re making it quick & easy for you! With Trader Joe’s Asparagus Risotto this meal comes together in less than 15 minutes.

This is truly the best frozen risotto we’ve tried. The velvety sauce has a wonderfully buttery taste, the asparagus is slightly crisp, and the rice is cooked perfectly. In fact, it’s like the rice version of mac & cheese!

But it needs a nutritional punch in order to turn it into a well-balanced meal. So, we’ve added chicken & almonds for protein and more veggies for additional nutrients.

Makes 2 servings
All ingredients purchased @ Trader Joe's

 

Ingredients:

  • oil spray

  • 1 tomato, diced

  • 1 pack (12 oz.) fresh asparagus (chopped)

  • ¼ pack (3 oz.) Grilled Lemon Pepper Chicken, chopped

  • 1 pack Asparagus Risotto (in frozen section)

  • ¼ cup sliced or slivered almonds

 

Directions:

  1. Spray a pan with oil and sauté diced tomato & asparagus for five minutes, covered, on medium heat.

  2. Add chicken and Asparagus Risotto. (The small yellow sheets are frozen sauce. They can go right into the pan along with the rice.) Cover and continue cooking for two minutes.

  3. Remove lid, stir gently, and cook 3-5 more minutes or until heated through.

  4. When ready, place on two plates and top each serving with 2 tablespoons almonds. Enjoy!

  • If cooking for one: We like the “cook once, eat twice” method! Prepare two servings today, and you have a meal ready for tomorrow.
