APPETIZER #1 –

Pesto Hummus Dip with Carrots & Crunchy Curls

 

Makes one serving. Multiply as needed.
All ingredients purchased @ Trader Joe's

 

Ingredients:

  • 2 tablespoons Organic Hummus

  • 1 teaspoon Vegan Kale Cashew & Basil Pesto

  • 10 baby carrots

  • 15 Crunchy Curls

 

Directions:

  1. Make the dip by mixing the hummus and pesto together in a small bowl.

  2. Place the carrots and curls on the side to enjoy with the dip.

 


 

 

APPETIZER #2 –

Bruschetta Mozzarella Dip with Crackers

 

Makes one serving. Multiply as needed.
All ingredients purchased @ Trader Joe's

 

Ingredients:

  • 3 Ciliegine Mozzarella Balls, cut into quarters

  • 2 tablespoons Fresh Bruschetta Sauce, drained

  • 5 grape tomatoes, cut into quarters

  • 6 Multigrain Pita Bite Crackers

 

Directions:

  1. Combine the mozzarella balls, bruschetta & tomatoes in a small bowl.

  2. Place the crackers on the side to enjoy with the dip.

 


 

 

APPETIZER #3 –

Artichoke & Jalapeño Stuffed Mini Peppers

 

Makes one serving. Multiply as needed.
All ingredients purchased @ Trader Joe's

 

Ingredients:

  • 5 mini bell peppers, halved & de-seeded

  • oil spray

  • ¼ cup Artichoke & Jalapeño Dip

  • 1 jalapeño pepper, sliced

 

Directions:

  1. Preheat oven to 350°.

  2. Line a baking sheet with nonstick foil. Place the halved peppers on the sheet, lightly spray peppers with oil and bake for ten minutes.

  3. Once cooled, fill each half pepper with the dip.

  4. Top each stuffed pepper with 1-2 slices of jalapeño.
