Grecian Chicken & Veggie Pizza
This unique pizza will satisfy your pizza craving! Our secret sauce is Trader Joe’s canned Grecian Style Eggplant with Tomatoes and Onions. It might sound unusual, but it tastes amazing as a pizza sauce. We’ve also added veggies & protein to turn your pizza into a complete, well-balanced meal.

Ingredients:

1 whole wheat pita pocket
-
oil spray
-
1 pack sliced crimini mushrooms
-
3 oz. (¼ pack) grilled chicken strips, chopped

½ can Grecian Style Eggplant with Tomatoes & Onions

¼ cup Shredded Pizza Seasoned Toscano Cheese
Directions:

Separate the front & back of the pita pocket by cutting along the edge.

Toast the two round pita pieces to your desired crispiness.

Meanwhile, spray a pan with oil and sauté the mushrooms for five minutes.

Add the chicken & eggplant, cook two more minutes, and remove from heat.

Place pita pieces on a baking sheet. Spread half the chicken-veggie mixture onto each pita piece and then sprinkle two tablespoons cheese over each.

Broil two minutes, or until cheese has melted.

Place each pizza on a plate. If you have any chicken-veggie mixture remaining, divide it onto each plate to enjoy on the side.
- *If cooking for one: We like the “cook once/eat twice” method. Enjoy one serving today and the other serving tomorrow. Toast just one half-pita each day. Store half the chicken-veggie mixture and half the cheese in the fridge for tomorrow.
