Baked Zhoug Salmon with Mashed Cauliflower
If you love hot & spicy food, you’ll love this recipe featuring Trader Joe’s Zhoug Sauce, a cilantro-based spicy sauce that looks like bright green pesto.
It’s a great flavor booster and works perfectly with fish.
To make a complete, balanced meal, we’ve paired the spicy fish with creamy, comforting mashed cauliflower. We’ve also included broccoli slaw for added texture and a nutritional punch.

Ingredients:

½ pack (8 oz.) salmon (two 4-oz. portions)

1 tablespoon Zhoug Sauce (Not a fan of spicy food? Use Vegan Kale, Cashew & Basil Pesto instead.)

oil spray

½ bag Mashed Cauliflower (frozen section)

½ bag organic broccoli slaw

½ lemon, cut into two wedges
Directions:

Preheat oven to 350°.

Place a large piece of foil on a baking sheet. (The foil should be large enough to fold over the salmon and seal.)

Put the salmon on the sheet and spread one tablespoon Zhoug Sauce all over. Fold the foil over and seal. Place in the oven and bake 10-15 minutes.

While fish bakes, spray a pan with oil, and then add the mashed cauliflower & broccoli slaw. Cook, covered, over medium heat 5-6 minutes.

When done, place half the salmon and half the veggies on each plate. Squeeze ¼ lemon on top. Enjoy!
